Fundamentals of Food Culture and Culinary Evolution

Food is culture and culture is food. Cuisine is the sum and cumulation of cultural choices across history. This course will familiarize the students with the foundations of modern food culture and introduce them to various athropological and sociological concepts of culinary culture.
